If Thanksgiving is the ultimate American holiday, reveling in Thanksgiving leftovers has to be one of Americas ultimate holiday pastimes. In fact, many hosts buy a bigger bird and make extra sides just to ensure a wealth of extras to savor in the days after. While we love a classic leftover turkey sandwich, especially those towering creations stacked high with stuffing, potatoes, and cranberry sauce, sometimes its good to stretch the palate a little and use your leftovers to create entirely new dishes. Turkey Singapore Noodles

Turkey Singapore Noodles

What Youll Need

  • 200g rice noodles
  • 2 tsp sesame oil
  • 2 eggs, beaten
  • 1 tbsp vegetable oil
  • 2 garlic cloves, crushed
  • thumb-sized piece ginger, minced
  • 1 red chilli, chopped
  • 2 red peppers, deseeded and sliced - plus any vegetables you have left over from Thanks Giving Dinner
  • 200g beansprouts
  • 6 spring onions, finely sliced
  • 250g/9oz leftover turkey meat, shredded
  • 140g leftover ham, diced
  • 3 tbsp Madras curry powder or paste
  • 1 tsp turmeric
  • 2 tbsp soy sauce, plus extra to serve
  • 2 tsp dry sherry
  • sprinkling of sugar
  • coriander sprigs and sliced chilli, to serve

How to Make It

  • Soak the noodles in boiling water until tender, then drain and toss in 1 tsp of the sesame oil.
  • Beat the eggs with the rest of the sesame oil and some seasoning.
  • Heat half the vegetable oil in a wok and pour in the eggs to make a flat omelette.
  • Cook on one side, then flip over, cook all the way through and transfer to a plate.
  • Place the wok back on the heat with the rest of the oil and quickly fry the garlic, ginger and chilli.
  • Add all the vegetables to the wok, fry for 1 min more, and then add the turkey and ham. Tip the noodles into the pan and stir through the curry powder, turmeric, soy, Sherry and sugar.
  • Cook everything together for 1-2 mins, then shred the omelette and stir it through the noodles.
  • Serve the noodles scattered with coriander sprigs, sliced chilli and extra soy sauce!

 

Turkey Pizza

Turkey Pizza

What Youll Need

  • 145g pizza base mix
  • 6 tbsp tomato pasta sauces
  • large handful (about 100g) leftover stuffing (a sausage stuffing works well for this)
  • large handful (about 100g) leftover cooked turkey, shredded
  • 100g mozzarella, sliced
  • small pack sage, leaves picked
  • 1 tbsp olive oil

How to Make It

  • Heat oven to 220C.
  • Prepare the pizza base mix following pack instructions. Once rolled out, leave to rest for 10 mins, and then top with the pasta sauce.
  • Scatter over the stuffing and turkey, and then top with the mozzarella.
  • Toss the sage leaves with the oil, and then scatter over the pizza, drizzling over any remaining oil.
  • Bake for 10-12 mins until the crust is crisp and the cheese has melted. Serve and Enjoy!

Hot Turkey Sandwiches

What Youll Need

  • French bread
  • 2 tablespoons light mayonnaise
  • 1/4 cup turkey gravy
  • 4 reduced-sodium bacon slices, cooked and cut in half
  • 12 ounces sliced cooked turkey breast
  • 2 slices provolone cheese, halved
  • 1 cup arugula
  • 1 tablespoon cranberry-shallot chutney

How to Make It

  • Preheat oven to 400°.
  • Place bread slices on a baking sheet.
  • Spread light mayonnaise over first bread slices.
  • Spread turkey gravy over second bread slices.
  • Top the mayonnaise-spread slices evenly with bacon slices, turkey breast, and provolone cheese.
  • Bake at 400° for 10 minutes or until cheese is melted.
  • Top cheese evenly with arugula.
  • Drizzle with cranberry-shallot chutney.
  • Top with gravy-spread bread slices.
  • Press sandwiches together and enjoy with your family!
